Lettuce Pesto
From Green Enough
Ingredients
Small garlic clove
1/2 cup loosely packed Italian parsley
4 cups loosely packed chopped romaine or other lettuce (tender-crisp varieties, such as butter crunch or Boston, work best)
1/2 cup Parmesan cheese
Instructions
- Purée all ingredients in food processor.
- Scrape down the bowl.
- Add Parmesan cheese.
- Season to taste with salt and pepper.
- Process to mix.
Use immediately— as a sandwich spread, dip for crackers or vegetables, or sauce for simple chicken breast, salmon fillet, or rice or other grain—or keep in an airtight container in the fridge; it will retain its flavor and color for several days. It’s also freezable, but not as flavorful thereafter as basil or pistachio-mint pesto.
